A Quick, Filling & Healthy Breakfast or Lunch

Poached Egg on Toast With Avocado, Cherry Tomatoes & Roasted Peppers

1 Slice of Toast (My favourite is M&S's Gluten Free 'Sliced White Boule' Bread)
1 Poached Egg
Dash of Balsamic Vinegar
Pinch of Salt
Half an Avocado
Handful of Cherry Tomatoes
Couple of Roasted Peppers 
Black Pepper

*Added Extra- A sprinkle of pine nuts works well with this and is great to add in if you're having this for lunch*

This is one of my favourite breakfasts. Not only is it healthy, it's so easy and simple to make. Also, whenever I eat this I always feel full until lunch time (stopping any morning snacking!). I often have this at the weekend as a treat but it's so quick that it could be made during the week as well. 

First of all, I make the little side salad by chopping some cherry tomatoes in half, chopping up half an avocado and getting some roasted peppers out of the jar (the antipasti jars of roasted peppers, sun dried tomatoes, artichokes etc are great to have in, I always throw some in a salad and they make a huge difference. The ones from Aldi are particularly good!). I am a black pepper fiend so I always put this on it. If you wanted to make a dressing for this (I would do if I was having it for lunch) I'd recommend White Wine Vinegar and Extra Virgin Olive Oil (with a ratio of Oil 2, Vinegar 1) plus salt and pepper. 

Boil a pan of water with a splash of Balsamic Vinegar and a dash of salt in. I then stir the water around so that it's going in a circle motion before then carefully cracking my egg into the pan. This ensures that the white and the yoke stay together better. The balsamic vinegar and the salt just make it taste nicer but these are optional, and other vinegars such as white wine vinegar will also work well for this part. 

As soon as the egg is in the water I start the timer on my phone to 2 and a half minutes to ensure that I have a runny yoke. 

I then toast one piece of bread and sometimes I add a bit of butter, other times I don't, it just depends how I'm feeling. 

The whole breakfast/ lunch is made in under 5 minutes and it really does keep you full for ages.
