Recipe: Chilli

I would say that Chilli is my signature dish. It's comforting, healthy and it's just so yummy! It's also so versatile; I have it with rice, baked potatoes or quinoa to mix it up a bit. Also, this dish doesn't need mince in it, it works really well as a vegetable chilli as the lentils and beans give it plenty of texture.


Beef Mince (optional)
1 Onion
2 peppers
3 cloves of garlic (small-medium size)
Half a fresh red chilli with seeds
Smoked paprika
Tin of 3 bean Salad 
Tin of chopped tomatoes
Dash of balsamic vinegar (about 1-2 tblsp)
Stock (gluten free veg stock)
Teaspoon of honey
Salt and pepper
Fresh Basil (sprinkle on top at the end)

Served here with quinoa (I've used a microwavable mixed packet of red and white quinoa from Morrison's which is super quick, healthy and tasty!) 


1. Wash and boil lentils.

2. Season the mince and fry it until brown. (If you're making vegetable chilli just go straight to step 3).

3. Put garlic, chilli and onion in. Fry for a couple of minutes.  

4. Add the peppers and then sprinkle over oregano, thyme and smoked paprika. 

5. Add balsamic vinegar and let it fry in that for a couple of minutes as it will sweeten. 

6. Add chopped tomatoes and stock. Add a teaspoon of honey if needed. 

7. Simmer. Add the lentils when they are cooked.

8. Add the 3 bean salad, warm through. Season with salt and pepper to taste.
