Pancetta, Pear and Walnut Salad

This is one of my favourite salads. The tangy dressing really contrasts to the sweet pear. It's quick and easy to make and is a tasty and healthy lunch. 

Half a carton of pancetta
A handful of walnuts
1 pear
Rocket Leaves
A few Artichokes from a Jar of Roasted Artichokes
A few peppers from a Jar of Roasted Peppers

*(Antipasti jars can be found in most supermarkets and are really handy to have in for salads)*

- 5 tablespoons balsamic vinegar
- 7 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 2 and a half teaspoons mustard 
- 2 small cloves garlic
-Handful of chopped fresh basil leaves

Adjust the measurements to suit your preferences (e.g. if you absolutely love walnuts, put more in!). I always improvise when I'm cooking depending in my tastes and what I feel like, that's why my measurements are rough estimates!

1. Put the rocket leaves on your plate.
2. Toast the walnuts (heat them gently in a non stick pan for a couple of minutes until they're warm). Sprinkle them onto your rocket leaves when they're done.
3. Fry the pancetta (I use the same pan that I toasted the nuts in to save on the washing up).
4. Chop up the pear and put that, along with the artichokes and peppers onto your rocket leaves and walnuts. Add the pancetta when it is cooked. 
5. Make the dressing and put over the salad.You only need a drizzle of the dressing as it's quite strong. Do not drown the salad in it as it will ruin it. There will be a lot left so you can save it for another day or later meal, or halve the measurements in the ingredients list.
