Recipe: Warm Potato, Pancetta and Mushroom Salad


This is quite a simple dish that I like to have for lunch when I fancy a salad but I'm feeling a bit cold at the same time, if that makes sense! It's warming and comforting and certainly fills you up.

Ingredients

5 new potatoes
Half a pack of pancetta
A handful of mushrooms
1 clove of garlic
3 or 4 spring onions
Rocket or spinach leaves
Approx 2 tablespoons of White wine vinegar  
2 tablespoons of Creme Freche
Salt and Pepper
Chives

Method

1. Boil the new potatoes. Leave the skin on for extra nutrients- plus time-saving! Let them boil for about 5 minutes before moving on to step two, just so that they will all be ready together.

2. Fry the pancetta. You don't need oil, it will fry better on its own.

3. After the pancetta has been frying for a few minutes and has changed colour, add the mushrooms and then the garlic. Fry gently, don't have the heat on too high as there's nothing worse than burnt garlic! They will only take a few minutes.

4. Add the white wine vinegar and mix it all together. Add the spring onions. Fry for one minute and then add the creme freche and potatoes. Warm through- only keep it on the heat for max 2 minutes or the creme freche will start to separate. Season to taste.

5. Fill a plate with rocket or spinach leaves and then add the warm salad on top. Add a sprinkle of chives for an extra bit of zing!
