Recipe: Kale And Pancetta Warm Rice Salad

This is kind of a cheat's recipe as it's rice from a packet, but it's meant to be a quick lunch so that's the point! It takes about 5 minutes to make so is perfect for a simple and healthy lunch at home.

(serves one)
Uncle Ben's Vegetable Rice (1/2 a pack)
Two very large handfuls of Kale
Half a packet of Pancetta
1 Onion
1 Clove of Garlic 
1-2 tablespoons of Balsamic Vinegar 
A Few Peppers (Antitpasti) 
A Few Artichokes (Anitipasti)

1. Fry the pancetta on it's own in a pan. After a few minutes, when the pancetta is a light pink, add the onion and the garlic. Once they're are a nice golden colour, add a splash of balsamic vinegar and let it fry for 30 seconds. Take out of the pan and put onto the plate.

2. Add a splash of olive oil into the pan and put the kale in. The kale shrinks A LOT so be very generous with your handfuls. Cover the kale in salt and pepper and fry until crispy, then add to the plate.

3. Add the antipasti peppers and artichokes to the plate and toss them around to mix it altogether.

4. Microwave the rice and mix it onto the plate. Et voila!
