Recipe: Special Egg Fried Rice


This is a great lunch as it's so simple to do and really tasty. This recipe is completely gluten free if you use Tamari Soy Sauce instead of the standard soy sauce that you buy. Hope you like it!




Ingredients (Serves 2)
1 cup of Rice 
1 Packet of Pancetta
2 Cloves of Garlic
Half a Fresh Chilli
A Thumb Sized Piece of Ginger
Peas (as many as you want!)
Sweetcorn (as many as you want!)
Spring Onions
A Dash of Soy Sauce (I use Tamari Soy Sauce as it's gluten free) - as much or as little as you like depending on taste. 
Dash of Rice Wine
3 Eggs

Method 

1. Boil the rice. (If you're using already-cooked rice then just add that in after step 2). Wait about 5 minutes before step 2 as the rice takes the longest. Use this time to chop the garlic, ginger, chilli and spring onions.

2. Fry the Pancetta in the pan.

3. After a few minutes when the pancetta cooked, add the ginger, chilli and garlic. Fry for a couple of minutes then add the spring onions. 

4. After the rice is cooked rinse it with cold water then add it to the frying pan. Add a dash of rice wine and mix it all together, then leave it for approx 30 seconds, then add the soy sauce. 

5. Whisk the 3 eggs in a bowl. Make a hole in the middle of the frying pan by pushing everything to the edges, then add the egg to the middle (as shown in the photo). Leave it to cook, do not mix it in until it is set, but stir it gently in the middle occasionally to ensure that it doesn't stick to the bottom of the pan and that it all cooks evenly. 

6. When the egg is solid (like scrambled egg) mix it altogether. You can add more soy sauce at this point if you want as well. Then serve :)
