Recipe: Honey and Mustard Chicken With Quinoa and Kale

Honey and mustard chicken is a popular dish in our flat. It's simple and quick to make, as well as very tasty and healthy- what's not to love?! This dish would also be nice without the chicken for vegetarians as it works with any kind of veg!

Ingredients (Serves 2-3)

1 packet of Fresh Chicken Fillets
1 Pepper (any colour but I've used a yellow one here)
1 Onion
1 Courgette
1 Carrot
5 tablespoons of Honey
5 tablespoons of Wholegrain Mustard
2- 3 tablespoons of Olive Oil

3/4 of a packet of Kale (I love kale so I used quite a lot as you can see from the picture, but obviously it's up to you- one thing I would say is that it shrinks A LOT when it cooks).

Quinoa (I used a microwavable packet of mixed red and white quinoa here but the dried version is also fine, it just takes longer, and I'd recommend toasting it briefly in a pan before boiling it).

(Finally, I usually put mushrooms in this dish instead of courgette but I didn't have any in this time! Either works fine, it just depends on your preference).


1. Mix the honey, mustard and olive oil together in a bowl. Stir it so that it's mixed well and has a runny consistency.

2. Dip the Chicken fillets into the honey, mustard and olive oil mixture so that each piece is completely covered and then add them to the frying pan. Put the remaining honey and mustard to one side as it will be used for the veg. If you need to make more honey and mustard sauce then just remember to keep them at equal ratios.

3. When all the chicken is covered and in the pan, fry on a medium heat until white all the way through and slightly crispy on the outside. Then put the chicken in a bowl and leave it to rest on the side.

4. Fry the onion, pepper, courgette and carrot in the pan with olive oil. Fry on a low-medium heat. After a few minutes add the remaining honey, mustard and olive oil.  Once cooked, add the chicken and mix it altogether, warming it through.

5. Fry the kale in olive oil and cover it in salt and pepper. Fry it for a couple of minutes until it is crispy.

Put the quinoa in the microwave and serve!

  2. I've only tried Quinoa once and hadn't even realized until I saw the packet! I love the sound of this and will definitely be trying it at some point. I promise to take a picture too!
